Not gonna lie, I might have an obsession and I might be a little bit crazy.

I get questioned by people how, why, and where do I get these? Even the craziest of all is it a subscription? I almost died laughing. But maybe I’m onto a gold mind. Just kidding. I’ve been told I’m extra. I’m not sure, extra is the world but it’s what I’ll use now.

Anyways, I like to go above and beyond for my kids in ALL things. I like to be ME. I like to try my best… and then I like to get a babysitter and order pizza. BALANCE.

Anyways, I am going to do a few updated bento boxes.

Super cute, super easy spring flower bento.

I used this Flower cookie cutter for the sandwich and apple.

I used Ezekiel bread , low fat cheddar, and organic ham grilled cheese.

Then I cut the apple in half and cut the front half off to push the flower cookie cutter through and topped both with a strawberry.

I added some popcorn with some colorful and flower sprinkles.

The DINO bento box is always a favorite and comes in different ways.

This bento included a Dino cheese cut out using these cookie cutters.

Added some rolled up ham, then a “green forest” of grapes and broccoli.

The best part is the Sugar free blue jello with the Dried mango turned into fish with Edible food pen.

They also get a snack at 10:30 and 3:30 so could add more cheese and meat if it needs to be more substantial.

This is also a regular and one of my favorites.

Out of this world bento !

I hand cut carb balance tortilla into a star and add cut up ham, cheese, and spinach. You can add whatever toppings you want.

Then I put Greek yogurt with some black Sparkle gel and sprinkles for the galaxy.

Then for the alien I cut and deseed a green apple use the same gel to glue Edible eye.

The is also a favorite and easy go to which so much option to edit.

Race car theme. This one isn’t to pretty. Sometimes packing them makes it difficult.

You can use a bun, but I just used a hot dog with baby tomatoes cut in half and green cheese to stick it together.

I cute some cheese in triangles for “cones”

Then I used carrot chips for “orange light. ”

Then I did a stop light apple assembly. I use Granny Smith and jazz Apple to create the red and yellow.

Here comes the Easter Bunny right down Easter Bunny lane.

Y’all. Holidays, kids parties, mommy chats, and a side or tea followed by processco are my jam.

I once read an article that said quit going over the top and giving your kids Pinterest parties .. yada yada.

Listen, it’s not for everyone that’s fine. However, I enjoy making special memories for our children and friends. I want our house to be always good memories and a place they want to hang out. I enjoy making themed food and healthy fun options. But, with some treats to. I’m not completely lame. Haha.

Anyways, Easter. One of my favorite holidays as a kid besides Christmas, because we always had fun eater egg hunts with money.

I still want to manage a family Easter party, but we had a fun little Easter themed play date.

So not only to I love to give the kids a little extra, I love my friend to have a good time too.

I made some hot berry hibiscus tea which is my favorite at the moment.

I put on some Kids yoga while we had some tea and chatted.

And of course I had a few decorations and food. Because food is my thing. Ha

I set up a kids table with a kids charcuterie board, with the cutest Bunny cutting board and chalk sign from the target dollar section. #targetdoesitagain

I made a super yummy, simple, and kids charcuterie board. Grapes, chocolate raisins, dry salami, and cheddar and Monterrey jack cheese cubes.

I used some Easter fabric and napkin holders from hobby lobby to add some Easter cuteness.

Bunny dish

I used my Baby cake maker to make these perfectly round cake balls, and then of course the easiest yummiest premade sugar cookies, and some meringue cookies.

Also, one of my favorite things is holiday books! So I set out our favorite Easter Books and then put them in a bin upstairs after the holiday is over.

And of course what kinda play date or party would it be without some type of backdrop or photo op?

I have really been into balloon garlands and backdrops.

I use this Balloon kit to help make mine. This was a small play date so I used left over balloons from birthday parties and other events.

So between tea, snacks, yoga, books, blocks, then all kids for themselves in the toy room and finished off with a glass of Prosecco.

Three chicken recipes

Three easy, quick, and healthy weeknight chicken recipes.

If your anything like me dinner can get challenging.

Between toddlers, sports, trying to be healthy, but get the family to eat. Some weeks I repeat the same things or everyone complains and it is draining.

This week I did 3 chicken dishes that worked well with our family and schedule.

First recipe is chicken paillard. Super simple and can be modified.

Recipe is super simple as followed:

1 lb thinly sliced chicken breast

Olive oil

Salt and pepper

Garlic seasoning

Lemon juice and lemon zest of 1/2 lemon

1 tsp mustard Dijon

Arugula

Shaved Parmesan

1. First make the dressing and let it set in the fridge. Take 2 TBS of oil, salt and pepper, lemon juice and zest, and 1tsp Dijon. Shake up together and set in fridge.

I used this Salad dressing shaker.

2. Season the chicken with salt, pepper, and garlic powder. Heat skillet with oil. (I used spray coconut oil) Cook each side of chicken for 3-4 min until cooked through.

3. Take arugula in a bowl drizzle with dressing and Parmesan and toss.

4. Put chicken on plate and top with arugula mix.

Simple. Easy. Under 20 min. Healthy.

I added some steamed asparagus and jasmine rice for the kids.

Next easy chicken dish is chicken and dinner in a pan. Who doesn’t love a one pan meal?

Chicken breast strips

Frozen green beans

Frozen corn on the cob

Zesty Italian mix

Ghee or butter

Seriously the simplest meal ever.

1. Preheat oven to 425 f

2. I melted 3tbs of ghee and added the package of zesty Italian mix.

3. Put chicken breast, green beans, and corn in an oven safe dish. Stir and pour seasoning over entire dish

4. Place in the oven for 35-45 min until chicken is cooked and veggies are warm.

I added some fresh strawberries and dinner rolls.

Mom success when the kids enjoy and eat their food without complaining.

Last chicken dish was prob my favorite.

Roasted chickpea and Romaine chicken ceaser salad.

I made some extra thinly sliced chicken breast earlier in the week which made this recipe even easier and faster.

1 can of chickpeas

Olive oil

Salt, pepper, garlic seasoning, chili powder

Girard’s light ceaser

Shaved parmesan

Cooked sliced chicken breast

Package of Romaine lettuce

1. Preheat the oven to 425f.

2. Drain, wash, and dry the can of chickpeas. Place on baking sheet drizzle with oil, salt, pepper, garlic, and chili powder.

3. Place in oven for 40 min shaking the pan every 10 min.

4. Place romaine on baking sheet drizzle with ceaser dressing. Stuck in the oven for about 5-10 min.

5. I added the cooked chicken to the chickpea pan for the last 10 min to warm it up and roast it a little bit.

6. Cut the romaine on your plate add chickpeas and chicken. Top with Parmesan and extra dressing if needed.

I added some Mac and cheese and strawberries drizzled in honey for the kids,

Seriously all these meals were winners with the kids and husband. They were simple, easy, and healthy.

St. Patrick’s day!

I love being extra.

I love an extra reason to do something fun for our kids and my friends!

We have been celebrating all the holidays together with kid parties and it has been so much fun.

Back drop and bar cart always add a little extra to a party!

This Bar cart is super cute and super affordable. I put it together myself quickly and the quality is great.

The ballon garland is made from different size and colors of green balloons. Also, this Ballon strip helps to create the outline for your garland.

I love the have the food match my theme. So for food I did “green” and “rainbow.”

For the main food I did “golden chicken nuggets,” broccoli tots, green quesadillas, a rainbow with gold at the end, spinach muffins.

Then I did a table with sweets at the end of the rainbow.

I made green rice krispy treats and lucky charm rice krispy treats. Then I bought green jelly beans, cheddar popcorn, green apple popcorn, and green rock lollipops from a local popcorn shop. I also added little pots with chocolate coins.

Cute gold plates from party city and tiny favor boxes from the dollar store for kids to eat and take home.

I love things to look cute but more than that I love the kids to have a good time and get to take something home.

I also sent these little St. Patrick day balls home with the kids. Besides the dollar store, oriental trading is my favorite place to buy for kid parties.

I also had an assortment of headbands, beads, hats, and clappers that the coulda do wear and take home. Mostly from the dollar store and oriental trading.

Not to mention I’m a big sucker for holiday books. We had The luckiest St. Patrick’s day ever, 10 lucky leprechauns, and The old lady who swallowed a clover. (My favorite)

All on amazon prime, because even tho I’m a Pinterest time mom… amazon prime is still a winner!!!

Then of course some of my late night Pinterest finds came to life with sensory play. I made a big batch of green spaghetti and added plastic golden coins and a big tub of lucky charms with cups and tools.

This seemed to be a bigger hit with the younger tots than the older, but everyone still enjoyed it.

The kids and moms had a blast and that’s what it’s all about.

Holiday/ winter bento boxes

Happy Holidays and New Years!

Man, oh man. Life has been crazy busy. Even with a break from school and activities the holidays kept us on the go.

So here is a little late post on some fun holiday bento boxes and breakfast I have made lately!

Fall // Turkey Themed bento box !

Corn bread turkey with apples for the feathers.

Spiral zed carrots and healthy pumpkin chocolate chip muffins.

Ghost themed bento box

This one was a big hit with the kids!

Ghost shaped quesadillas , with frozen peas and edible eyeballs, black beans in purple silicone muffin wrapper, with purple grapes.

Nutella bear toast

Super easy and super fun!

Whole wheat toast with a Nutella bear topped with banana nose and blue berry eyes. Super easy and fun. You can always improvise and use fruit or things you have on hand.

Snowman winter wonderland bento

I used mini bagels and reduced fat cream cheese with raisins and strawberries for the snowman’s face and added some marshmallows for some fun snow! I added some left over turkey and red and green fruit for the Christmas theme!

Christmas minion

This was another favorite of the kid! But you could totally do any theme minions with a banana.

Once again I used the edible eye balls which I order from amazon, but can be bought from craft stores or Walmart. I used washable marker because it doesn’t bleed through the skin of the banana and they won’t be eating it anyway. Put some popcorn underneath the bananas for an extra snack and snow look.

I added cut up snap peas and raspberries for some more red and green Christmas theme! Then some cut up meat and cheese for extra protein !

Lastly, just a fun quick breakfast and improvised with what we had on hand!

Lion protein pancake

We used our go to protein pancake mix from kodiak and added milk and egg for more protein!

I made one large pancake and one small for the nose.

Then we used a clementine orange around the face for the main and then banana and blueberries for the face.

Once again you can use anything you have on hand to make eating fun and healthy!

Hey, I know packing lunch can be frustrating and sometimes you don’t know what to pack. But, I am here to help! I have some fun ideas and they seriously take barley anytime. I enjoy meal planning and grocery shopping, not everyone does. So, for those who want some help or don’t feel that they are creative, I am here to help!

First up is the DINO BENTO BOX, because lets face it most 3 year olds are obsessed with Dinos.

Promise this BENTO BOX IS EASY PEASY: Just takes a little planning and supplies.

It is lunch meat with a cheese dino made from a cookie cutter on amazon. DINO COOKIE CUTTER.

Broccoli trees and cucumber forest.

BOILED DINO EGG over olive rocks. Use a food color pen to draw the “cracked egged.” This pen will come in handy!  food color pen.

Container for ranch for the veggies because lets face it, if your toddler eat veggies they need ranch right? mini containers

Plus, I threw in an extra vegan muffin for more food. We get them at our local HEB and the kids love them. Low sugar, real ingredients, no dairy!

Next Bento box up is… OUT OF THIS WORLD BENTO BOX

SERIOUSLY, super easy! I made this all the night before.

I actually used a “snowflake” cookie cutter because I didn’t have a star. Literally carb balance tortilla, lunch meat, and slice of cheese. Use the cookie cutter to cute the shape out before putting it on skillet.

Next is a protein muffin with a little sugar free chocolate syrup and some sprinkles for the GALAXY. I made these protein muffins in bulk and stick some in the freezer to have on hand. I use the KODIAK MIX, with extra egg and almond milk for more protein and fat.

Then the alien apple, take a green apple cut it in half and use gel or cream cheese to stick the EYEBALLS on.

(( see it is possible to be a amazon prime mom and a pintrest mom, because all my thinks are amazon))

Next up.. SEA LIFE BENTO BOX.

Cresent Octopus over pepperoni and olive rocks. To make the octopus, I used annie’s canned crescent rolls. I took one triangle and cut 7 strips. After that, I took the left over corner and cut a cheese stick piece off and rolled the crescent around it. Next, I took the legs and attached them to the head and added olive pieces for the eyes. Baked in the oven at 325f for 12 min.

Kiwi turtle cut 3 grapes in half and used a slice of kiwi, I used toothpicks to stick through the kiwi and stick through the grapes.

Then through some gold fish, because what kid doesn’t love gold fish. Oh and its easy.

But, y’all one of the best tips I can give, is making it the night before. Plus, planning. I know that part is easier said than done.

I used kitchen siscors to cut out a cloud, then i filled it with GREEN CREAM CHEESE from my favorite site BABY FOODE.

Blueberry rain and cheese cloud.

Once again, I used the edible marker and eyeballs linked above.

Some lunches are more creative and time consusiming than others. Besides, making the cream cheese this bento box took seconds. Make the spread the night before and it makes life so much easier!

Okay, next up on the list the the RACE CAR box. I thought it would be one of my son’s favorite because, he loves cars and apples. But, he wasn’t a big fan of the thick bread for the sandwich. I still think it is a cute idea though and can always be modified.

CAR SANDWICH using fresh baked bread at HEB with applegate turkey and cheese, using toothpicks for the cucumber tires.

Then ORANGE TRAFFIC cones, used a cheez it and cut a carrot into a triangle using ranch to stick them together.

Then stop light apples. Red, yellow, and green apples.

Last BENTO BOX for this post.

ALLIGATOR BOX.

This one isn’t the prettiest but, it was fun.

I used a green spinach tortilla and used kitchen siscorrs to cut it into the shapes I wanted then filled the body of the tortilla with pizza sauce, pepperoni, and mozzarella.

Over blueberry water.

With a cheese and mac and cheese sun. I used a circle cheese and made a face with black olives and pepperoni and macaroni around the circle.

 

WELLLL, I hope that everyone enjoyed some fun lunch ideas. Does anyone have anything that they would like to see?

I am thinking not about themes, but maybe colors or letters. Plus, I will make one about NO sandwiches.
